MEAL PLANNING

I don't really meal plan. Instead, I shop whatever is on sale at the grocery and plan my dinners around those proteins.  I do double or triple batch things like pancakes, muffins and tortillas.  Sometimes I visit a few grocery stores a week for the best deals. 

Here is a list of our favorite proteins

  • ground beef 
  • pork loin and thick cut chops
  • chicken thighs and breasts
  • ground turkey
  • sirloin steaks
  • salmon
  • cod
  • shrimp
  • kielbasa sausages
  • ribs

Here is a list of our favorite veggies

  • romaine lettuce for easy salads
  • cucumbers
  • spaghetti squash
  • cauliflower (whole or riced)
  • green beans
  • broccoli
  • eggplant
  • Brussel sprouts

Lunchbox favorites (I pack a thermos. Fill with hot water, sit for 10m, then dry out and add hot food) - dinner leftovers are awesome.

Family Favorite Dinners

Simple Dinners that don't need recipes

  • kielbasa sausages cooked in sauerkraut with side salads with ranch
  • cheeseburgers (hold the buns) with green beans
  • store bought Rotisserie chicken (check ingredients) with a side veggie or salad
  • breakfast for dinner
  • Chef salads with grilled chicken
  • steaks on the grill

You don't have to over-complicate food. Meat + veggies = WINNING. We don't usually do desserts during the week, but in the beginning, I let my kids have all the treats they wanted. Easy things to keep on hand are Nick's or Rebel ice cream, High-Key sandwich cookies, SF jello or home baked cookies. Check out our favorite desserts HERE
